Spanish Shrimp over Rice Recipe
Greg Hare from Stratford University demonstrates a quick and easy, healthy dish. It's simple to cook up and packed with flavor!

3 Tbs.          Olive Oil
1 lb.             Shrimp, peeled and deveined
1 Tbs.          Garlic, crushed
1/4 cup          Tomato, chopped
2 Tbs.          Cilantro, minced
1/4 cup          Peppers, julienne cut
1/4 cup          Butter, small cubes
pinch            Saffron (optional)
1 cup           Rice, long grain
1 cup           Chicken Stock
1 cup           Tomato, canned
to taste         Salt
to taste         Pepper

In a small pot, put the rice, stock, and canned tomato.  Bring to a boil, and then lower the heat to simmer and cover.  Allow the rice to absorb all the liquid and reserve the cooked rice mixture keeping it warm.

In a sauté pan, heat the olive oil.  Season the shrimp with a little salt and pepper and sauté until they are almost done.

Add the peppers and saffron and cook until the peppers are soft.

Add the garlic and tomato and let it cook for about 2 minutes.

Slowly add the butter in and swirl it around to help make a nice smooth sauce.

Serve with the rice mixture made previously and enjoy
