Summertime Caribbean Shrimp Sautee Recipe

An easy-to-make flavorful recipe for lunch or dinner! This shrimp and rice-based dish is excellent for summertime, with its refreshing combination of pineapple and a hint of spicy pepper. This recipe serves four.

Summertime Caribbean Shrimp Sautee Recipe
Yield: 4 portions

3 Tbs.              Olive Oil
1 lb.                Shrimp, peeled and deveined
1 Tbs.              Garlic, crushed
1/4 cup            Tomato, chopped
1/4 cup            Peppers, julienne cut
1/4 cup            Butter, small cubes
1/2 tsp each     Curry, thyme, allspice, crushed red pepper, turmeric
1 ea.               Pineapple, diced
1 cup               Rice, long grain
1 cup               Chicken Stock
1 cup               Tomato, canned
to taste            Salt
to taste            Pepper


1. In a small pot, put the rice, stock, and canned tomato.  Bring to a boil, and then lower the heat to simmer and cover.  Allow the rice to absorb all the liquid and reserve the cooked rice mixture keeping it warm.

2. In a saute pan, heat the olive oil.  Season the shrimp with a little salt and pepper and all the spices.  Saute until they are almost done.

3. Add the peppers and cook until the peppers are soft.

4. Add the garlic and tomato and let it cook for about 2 minutes.

5. Slowly add the butter in and swirl it around to help make a nice smooth sauce.  Finish with the pineapple.

6. Serve with the rice mixture made previously and enjoy!
